- Bring a large pot of generously salted water to a boil. Cook the pasta according to the package directions until al dente. Before draining, reserve 1 cup of the pasta water.
- While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium heat.
- Add the diced onion and cook for 5 to 7 minutes, stirring occasionally, until softened and translucent.
- Stir in the minced garlic and cook for 30 seconds, just until fragrant.
- Add the tomato paste and cook for 2 to 3 minutes, stirring frequently, until it darkens slightly in color.
- Carefully pour in the vodka and stir to combine. Simmer for 2 to 3 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.
- Stir in the passata, salt, and black pepper. Bring the sauce to a gentle simmer and cook for 10 to 15 minutes, stirring occasionally.
- Reduce the heat to low and slowly stir in the heavy cream until the sauce is smooth and creamy.
- Add the grated Parmesan cheese and stir until completely melted.
- Add the drained pasta to the sauce and toss until evenly coated. If the sauce is too thick, stir in a splash of the reserved pasta water until it reaches your desired consistency.
- Taste and adjust the seasoning with additional salt and pepper if needed.
- Serve immediately with extra Parmesan cheese, fresh basil, freshly cracked black pepper, or red pepper flakes if desired.
