For this year, I made a spooky charcuterie board to embrace the Halloween spirit. Featuring carved apples and marshmallows with candy eyes, this board is full of festive vibes. Although it was my first attempt at creating a charcuterie board, I was pleasantly surprised by the result.

How to Make it!
There are so many cheeses, it is really hard to choose just a few. For individuals with lactose intolerance, like myself, the choices may be more limited. Personally, I often opt for goat cheeses due to their typically lower lactose content compared to cow's milk cheeses. However, I do occasionally indulge in a milk cheese. Each cheese has its own unique characteristics, from the tangy notes of a goat cheese to the buttery texture of a milk cheese. I enjoy a varied selection of cheeses that offer a range of flavors and complementary pairings. So, while navigating the world of cheeses it also presents opportunities to discover new favorites and savor the simple pleasures of good food and good company.
Brie - Brie is consistently a popular choice for a charcuterie board. Usually, we opt for a goat's milk brie. I believe that the goat variety is truly superior! It has a more intense flavor and a perfect texture. Once I tried the goat's milk version, I couldn't go back. For my board, I shape the brie into a pumpkin using a cookie cutter. This resulted in an adorable presentation and added a focal point to the board.
Cheddar - Cheddar is a must-have addition when putting together a delightful charcuterie board. This popular choice is beloved by all and adds a vibrant orange hue that pairs perfectly with fruits. Cheddar's creamy texture and bold taste blend harmoniously with other elements on the board, creating a visually enticing and tasty spread. Its versatility allows it to complement cured meats, nuts, and crackers, elevating the board. Remember, cheddar is not just another cheese but a key player in curating a truly memorable charcuterie board.
Smoked Gouda - My husband and I love a good smoked Gouda. The flavors are truly different then any other cheese. The bold aromas truly blend with all meats which makes this cheese perfect for charcuterie boards.
Cream Cheese - I combined a block of cream cheese with cranberry jalapeno pepper jam on my board. These two are inseparable. Whenever my mom entertained guests, she would always serve cream cheese with pepper jam. It's a unique experience that is not commonly found on a board. Once you try this combination, you won't want anything else. The contrast between cool cream cheese and zesty pepper jam offers a unique sensory experience, with flavors dancing on your taste buds in a symphony of sweet, savory, and spicy notes. Meats
Choosing the right meats can be just as challenging as selecting from a variety of cheeses. The options for arranging them and deciding where to position each one can feel overwhelming. Below is the selection I included on my eerie platter.
Salame Milano -Mild Salami seasoned with pepper. Its smooth texture and balanced seasoning make it a versatile option for any charcuterie board.
Salame Calabrese - This hot and spicy salami is a bold choice that complements rich and creamy cheeses like Brie. The intense flavors of the Calabrese salami create a tantalizing contrast when paired with the mild creaminess of Brie, making it a standout selection for those who enjoy a bit of heat in their charcuterie spread.
Salame Toscano - This spicy salami is uniquely seasoned with aromatic fennel seeds, adding a depth of flavor that elevates any charcuterie board. The combination of heat from the spices and the fragrant notes of fennel creates a sensory experience that is both satisfying and memorable. Whether enjoyed on its own or paired with other meats and cheeses, Salame Toscano is a standout choice for those who appreciate bold and distinctive flavors in their charcuterie selections.
I opted to create salami fans with two salamis on the board. Fold each slice in half, then fold it in half again to form a fan shape. Arrange them standing upright, slightly overlapping for a cascading effect. These fans are simple to make and add an elegant touch! As for the third salami, I made salami cones. Roll each slice tightly into a cylinder and then fold it in half. Position them close together. This technique enhanced my Halloween board, giving it a spooky vibe!
Almonds and Nuts Galore!
For my Halloween board, I curated a delightful mix of snacks, including a convenient cup of mixed nuts featuring cashews, almonds, and walnuts. These nuts, with their unique flavors and textures, blended perfectly to create a festive and inviting display embodying the essence of autumn. The buttery richness of cashews, the crunchy goodness of almonds, and the earthy depth of walnuts complemented each other beautifully, adding seasonal charm to the board. In my experience, I have found that incorporating a range of colors, textures, and flavors can elevate the overall dining experience. For instance, the crisp sweetness of green grapes complements the savory elements of cured meats and cheeses, while the juiciness of blackberries adds a burst of freshness to each bite. The combination of watermelon and cantaloupe provides a refreshing contrast to richer components, offering a light and hydrating element to the board.
Additionally, the addition of apples brings a crunchy texture and a tartness that can balance out the richness of certain cheeses or charcuterie items. I sliced my apples and then used small Halloween cookie cutters to create various shapes. These created cute visuals that elevated the board!
