There’s something so cozy about making fresh biscuits from scratch, and today I treated myself to these flaky biscuits. I topped them off with a homemade apple jam I made last week, it was perfect!

This was only my second attempt at making these biscuits, they are sooooo good! Whether you’re having them with breakfast or as a snack, these biscuits are a must.

Give this recipe a try and let me know how they turn out for you!

- 2 cups all-purpose flour
- 5 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon sugar
- 1/2 teaspoon kosher salt + 1/4 tablespoon
- 7 tablespoons cold butter (freeze it for a day)
- 3/4 cup + 2 tablespoons whole milk or buttermilk

1. Preheat your oven to 425°F (218°C).
2. In a large bowl, combine the flour, baking powder, baking soda, sugar, and salt.
3. Grate the chilled butter into the dry ingredients using a cheese grater. Toss the butter in the flour mixture as you go.
4. Make a well in the center and pour in the milk (or buttermilk). Stir gently until a shaggy dough forms, don’t knead!
5. Turn the dough out onto a floured surface. Use your hands to bring it together (add a bit more flour if sticky).
6. Roll out the dough and fold it into thirds like a letter. Rotate 90 degrees and repeat two more times.
7. Cut out biscuits using a cookie cutter or cup.
8. Arrange the biscuits in a skillet, close to one another.
9. Bake for 10-15 minutes, until golden brown.
10. Enjoy your biscuits hot with your favorite topping—like that apple jam!

Of the many things we have done on our honeymoon, one of our favorites has to be taking a cooking class led by the head chef of Maxi, a Michelin Star restaurant near to our hotel. Hopefully, you enjoy some of the incredible dishes that we were able to learn and try.

The first is a stuffed tortellini with tomato sauce. The second a sautéed octopus with olives and capers. And the dessert is a take on tiramisu with a fresh merengue and cocoa crumble.

YAYYY I have officially moved into our first home in Texas, and I’m already falling in love with the space that’s starting to feel like a home.

🏡 With just one month left until our wedding, the countdown is on!

It’s a bit bittersweet knowing that Stephen won’t be living here full-time until after we’re married, but I’m so looking forward to starting this new chapter together.

We’re ready to make so many memories in our new place and celebrate this incredible journey. Here’s to new beginnings and the adventures that await!🥂

Life update: Stephen and I are reaching a major milestone as we graduate this weekend! 🥳
It’s be an honor to support him through the final stretch of his schooling, and I’m so proud for all he’s accomplished. He truly never ceases to impress me with his intelligence and determination. I’m eagerly looking forward to witnessing his continued growth and success.

And just around the corner, we’re counting down the days to our wedding—only 101 left! I can’t wait to share more updates as the big day approaches. 🎉

Holy Saturday, my favorite mass of the year! It’s a day when we come together in quiet reflection, thinking deeply about Christ’s sacrifice and eagerly awaiting his resurrection. The atmosphere is solemn as we mourn Christ’s death and his body lies in the tomb, surrounded by silence. But even in this somber moment, there’s a glimmer of hope, a feeling of anticipation for what’s to come. Holy Saturday symbolizes redemption and the triumph of light over darkness. During the Easter Vigil, we remember Christ’s journey into death and his ultimate victory over sin and death. It’s a powerful reminder of God’s boundless mercy and the transformative nature of Christ’s sacrifice. As we gather in prayer, we’re invited to journey through despair and emerge into the brilliance of resurrection, renewed in faith and filled with hope for eternal life.

Normally, "rest" would include watching TV or social media, but the past few weeks, I've deprived myself of such goods. The word "rest" has taken on new meaning. Only Our Lord can provide the rest for our souls!

The world will tell you to consume things that bear no good fruits! Social media is filled with lies and distractions that lead us away from the true peace found in Christ.

In this sacred time, away from the noise of the world, I discover a deeper connection with my faith that surpasses any pleasures social media may offer. Our souls find genuine rest in the presence of Our Lord, away from the constant chatter of a world urging us to seek fulfillment in empty pursuits.

Let us be reminded that when the world tells us to do something one way, do the other. Don't give in to the consumption of empty pleasures and superficial distractions. Embrace the counter-cultural path of seeking true rest and fulfillment in the spiritual sanctuary of Christ. In choosing this alternative route, we safeguard our souls from the noise and restlessness that prevail in the world's clamor.
